Really healthy, filling soup! Eat with C-vitamin rich food like peppers to absorb more iron from the spinach!

Recipe Ingredients for Spinach Soup

900 gram frozen spinach
1 cup green onion
1 tablespoon yellow onion
1 tablespoon butter
400 gram low sodium chicken broth
400 gram water
2 tablespoon flour
4 oz skim milk
1 tablespoon creme fraiche
1 salt
1 pepper

Recipe Directions for Spinach Soup

Put the frozen spinach in a pot with some water until it thaws out a bit. Add the onions. Sprinkle on the flour and add the rest of the water and chicken stock. Cook for 10 minutes. Stir in the milk and creme fraiche (original recipe is 1 dl heavy cream, makes it really good but higher in calorie). Season with salt and pepper. Run it through a food processor if you prefer a thinner consistency. Serve with egg halves and Swedish Crispbread (WASA) with green pepper slices.
