This is a large portion. I have a hard time eating a small amount without blowing it later.

Recipe Ingredients for Spinach Souffle

2 teaspoons margarine
2 tablespoons flour
1/2 cup non fat milk
5 ounces spinach ( frozen, chopped)
3 tablespoons onion (chopped)
6 egg whites

Recipe Directions for Spinach Souffle

  1. Nuke the spinach and squeeze liquid out of it.

  2. Spray a medium sized saucepan with PAM and melt the margarine. Whisk in the flour and let simmer, while whisking for 1 minute. Add milk and simmer for 1 more minute while whisking. Add spinach. Season with a pinch of nutmeg and pepper. Stir in onion.

  3. Beat egg whites until stiff peaks form and fold into spinach mixture.

  4. Spray a casserole with PAM.

  5. Place mixture into casserole and bake in a preheated 350 degree oven for 35 minutes.
