Recipe Ingredients for Spinach Souffle with Parmesan

1 cup Spinach
1 tbsp olive oil
1 tsp 5-Pepper Hot Pepper Oil
1 tsp marjoram
1 tsp nutmeg
1/2 tsp black pepper
1/2 tsp cayenne pepper
2 T balsamic vinegar
1/4 cup Whole Wheat Pastry Flour
1 tbsp Brummel
1/2 c chopped Onions
2 clove Garlic
1 tsp Nutmeg, Ground
2 tbsp Parmesan, Grated Cheese
3 egg whites
1 egg yolk
1/4 tsp Leavening Agents, Cream Of Tartar
2 tbsp pine nuts

Recipe Directions for Spinach Souffle with Parmesan

Thaw spinach and squeeze out moisture. Chop fresh parsley to measure 1/4 C. Preheat oven to 350. Lightly oil a 1 quart souffle or casserole dish. Heat shortening and oil in saucepan over medium low heat and saute onion, add flour, stir until smooth and bubbling. Add spices, vinegar, and pepper oil. Gradually add Silk, stirring constantly. When thick, remove from heat. Separate the eggs. Beat with cream of tartar until stiff peaks. Beat the one egg yolk (save the other two egg yolks for another recipe - do NOT use liquid egg white as they will not beat up) until frothy. Stir egg yolk into the sauce mixture, stir in spinach and parsley. Stir in the parmesan Stir in about 1/4 of the egg whites into the spinach mixture, then gently fold in the remaining egg whites. Pour into the prepared souffledish, top with the pine nuts, set dish in a large pan and then add water to a depth of about 1 inch. Bake for a total of 50-60 minutes. Top shoyuld be lightly browned. Serve immediately. Nice with a side salad and some french bread.
