Recipe Ingredients for Spinach and Shitake Gratin

20 oz spinach, steamed and chopped
1 tbsp olive oil
1 medium onion, chopped
8 oz shitake mushrooms, sliced
1 cup nonfat evaporated milk
2 slices whole grain bread, torn into crumbs
1/3 cup Monterey Jack cheese, shredded
1/4 cup walnuts, chopped

Recipe Directions for Spinach and Shitake Gratin

  1. Cook onions and mushrooms in the oil until the mushrooms are tender.

  2. Stir in spinach and evaporated milk.

  3. Heat through and season with salt, pepper and nutmeg.

  4. Transfer to a prepared, shallow 8-inch baking dish.

  5. Preheat oven to 375F

  6. Combine breadcrumbs, cheese, and walnuts in a bowl then sprinkle over the top of the spinach mixture.

  7. Bake for about 30 minutes or until top is golden.
