Recipe Ingredients for spinach scampi

1 diced onion
2 cups fresh spinach
1 tbsp+chopped shallot
48 grams garlic
6 oz. shrimp
1/4 cup dry white wine
1 tablespoon Parmesan cheese
1 tablespoon smart balance butter
1 tablespoon smart balance oil
1/4 cup lemon juice

Recipe Directions for spinach scampi

  1. saute veggies

  2. add cooked shrimp

  3. add two servings of thin spaghetti

  4. saute with Parmesan, wine and lemon juice

  5. add salt and pepper to taste
