This is an Americanized version of a Jamaican Dish called callaloo and fish

Recipe Ingredients for Spinach and Saltfish

12 oz Salt Cod Fillet
3 plum tomato Tomatoes, Red, Ripe
2 medium (2-1/2" dia) Onions
3 serving VIGO EXTRA VIRGIN OLIVE OIL
1 serving VIGO EXTRA VIRGIN OLIVE OIL
24 oz Spinach

Recipe Directions for Spinach and Saltfish

  1. dice onions and tomatoes

  2. boil cod for 15 mins and discard water

  3. heat oil, add veggies (not spinach)

  4. add saltfish

  5. boil spinach separately in very little water

  6. add spinach and water to others

  7. cook all for 1 min

  8. add black pepper to taste
