Very flavorful recipe from Eating Well magazine. I doubled thecheese called for, but it's still healthy.

Recipe Ingredients for Spinach Salad with warm Maple Dressing

2 T pecans, chopped
10 oz. fresh spinach, stemmed, washed and dried
1 cucumber, peeled seeded and cut into 1/4 inch slices
2 tsp. olive oil
2 T shallot, chopped
1/4 c apple cider vinegar
2 T pure maple syrup
1/2 c. cheese (Gouda or cheddar), smoked, shredded

Recipe Directions for Spinach Salad with warm Maple Dressing

  1. In a small, dry skillet, toast pecans over low heat, stirring often, until fragrant (2-3 minutes). Set aside.

  2. In a big salad bowl, toss spinach and cucumber.

  3. In skillet, heat oil over medium low heat. Add shallot, stirring until softened (about 4 minutes). Add vinegar and maple syrup and bring to a boil. Season with salt and pepper.

  4. Immediately pour over spinach and cucumbers. Toss well, then sprinkle with cheese and pecans.
