Recipe Ingredients for Spinach Salad with Snow Peas and Almonds

284 g spinach, trimmed and torn
1 cup snow peas, trimmed and thinly sliced
227 g water chestnuts, sliced drained and trimmed
1 sweet red pepper, thinly sliced
125 ml almonds, toasted and slivered
1 green onion, thinly sliced diagonally
50 ml vegetable oil
25 ml soy sauce
25 ml rice vinegar
2 cloves garlic, minced
5 ml gingerroot
1 ml pepper

Recipe Directions for Spinach Salad with Snow Peas and Almonds

  1. Ginger Dressing:

  2. In jar, shake together oil, soy sauce, vinegar, garlic, ginger and pepper. Set aside. (Make-ahead: Refrigerate for up to 1 week.)

  3. Arrange spinach in large bowl. Top with snow peas, water chestnuts and red pepper. (Make-ahead: Cover bowl with damp towel and plastic wrap. Refrigerate for up to 2 hours.)

  4. Add dressing; toss to coat. Garnish with almonds and green onion.
