Recipe Ingredients for Spinach Salad

4 cups raw spinach
1 hard-boiled egg, chopped
1/4 c peppers, diced
2 mushrooms, sliced
1/4 c cucumber, sliced
7 black olives
3 cherry tomatoes
2 T vinegar
1/5 ounce bacon, crumbled
1/2 T extra virgin olive oil

Recipe Directions for Spinach Salad

I buy 2 bags of spinach leaves, 1 cucumber, a container of mushrooms, a container of grape tomatoes, a can of black olives, and a package of multi-colored peppers. Then I chop, dice, and slice everything, and put equal portions into 6 quart-sized bags and store them in the fridge. I also use the thinnest sliced bacon I can find, and go ahead and cook about 5 slices at a time, and hardboil a dozen eggs while I am doing all the prep work. For the dressing, I take the vinegar, bacon, and EVOO, add some no-salt seasoning, and microwave it for about 1 minute, then pour it over my salad.
