handy way to use up leftover spinach salad or make it from fresh ingredients like this. If using leftovers, just fry the bacon, drain the pan, saute the leftover salad and add the eggs.

Recipe Ingredients for Spinach salad omlet

12 eggs
18 g bacon grease
2 oz cooked bacon
2 c fresh spinach, chopped
1/2 c onions, chopped
1/2 c bell pepper, red, chopped
1/2 c cheese, romano, grated
4 oz cheddar cheese

Recipe Directions for Spinach salad omlet

  1. fry 3 oz bacon in large oven-proof skillet, drain all grease

  2. saute onions peppers, add .5 t bacon grease if needed. turn down heat to warm

  3. Beat 1 dz eggs + 3 T water until bright yellow

  4. Turn up heat to med low and deglaze the pan with 1 T basalmic vinegar.

  5. add fresh spinach and wilt then add the eggs. Stir to incorporate.

  6. preheat the oven broiler on high adjusting rack to be able to take skillet with 3' to 4" dist from element

  7. cook over med low while you grate the cheese.

  8. add cheeses and place under brioler for 3 to 4 minutes until cheese is bubbling.

  9. turn off oven and close door for 2 -3 min to cook through
