Hot grilled vegetables slightly wilt the spinach and melt the goat cheese, making a unique and healthy side dish for a cookout.

Recipe Ingredients for spinach salad with grilled vegetables

10 ounces baby spinach
4 ounce goat cheese, crumbled
4 med red bell peppers
1 large onion
1 zucchini
1 pint cherry tomatoes
2 tbsp olive oil
3/4 tsp salt
1/2 tsp pepper
1 tbsp balsamic vinegar

Recipe Directions for spinach salad with grilled vegetables

Coarsely chop red peppers, onion and zucchini into large chunks and place in a large bowl. Add whole cherry tomatoes, olive oil, salt and pepper and mix thoroughly. Place in a grill pan and grill over med heat until brown and crisp tender. In the meantime, mix spinach and goat cheese. Add hot grilled veggies and mix the salad throughly. Sprinkle salad with balsalmic vinegar.
