Recipe Ingredients for Spinach Salad/Citrus Drsg

1/4 cup red onion, chopped
10 cups fresh spinach, chopped
1/2 cup pecans, halves
4 oz goat cheese, crumbled
3/10 cup dried cranberries
1 tsp lemon zest
2 T lemon juice, fresh
2 T orange juice
1 T dijon mustard
1 T honey
1/4 tsp thyme
1/4 tsp salt
1/4 cup olive oil

Recipe Directions for Spinach Salad/Citrus Drsg

  1. mix last eight items for dressing

  2. bake onions in oil 350 for 20 minutes

  3. add to spinach with cheese and cranberries

  4. add dressing
