Great Spinach Salad, good source of omega 3 essential Fatty acids.

Recipe Ingredients for Spinach Salad with Beets and Feta Cheese

4 cups Baby Spinach
1 serving Balsamic Vinegar
1 serving Extra Virgin Olive Oil
1 oz Original
1 serving Tate's Honey Mustard
14 oz Sliced Beets

Recipe Directions for Spinach Salad with Beets and Feta Cheese

  1. Preheat oven to 350 degrees. Spread pine nuts on a baking

  2. sheet and toast until golden, about 5-6 minutes. Remove

  3. from oven and set aside.

  4. If using fresh beets, peel and slice beets. Cook in

  5. boiling water until tender; drain, rinse in cool water,

  6. drain again and set aside.

  7. Make vinegrette dressing by combining olive oil, maple

  8. syrup, mustard and salt and blending until smooth.

  9. Place spinach in a large salad bowl, pour dressing over

  10. and toss to coat. Divide spinach among 4 - 6 salad plates.

  11. Top with sliced beets, cheese and pine nuts.
