Yummy salad that is also good with some bacon on it. Don't worry about the fats, they are healthy and there aren't enough carbs to store the fats.

Recipe Ingredients for Spinach Salad w/ Avacado & Mushrooms

1 lb fresh spinach
2 ripe avocados
8 oz white mushrooms
1/4 cup scallions
3 tbsp balsamic vinegar
2 minced garlic cloves
1 tbsp Dijon mustard
1 tbsp fresh basil
3/4 cup extra virgin olive oil
1 black pepper

Recipe Directions for Spinach Salad w/ Avacado & Mushrooms

  1. mix vinegar, mustard, garlic, basil, oil and pepper in food processor and mix till smooth

  2. place spinach, avocados, mushrooms, and dressing in a large bowl and mix together.
