Light vegetable side dish to balance out your Thanksgiving table. to make ahead, prepare the vinaigrette and clementines, pack everything separately and toss all together before serving. For an entree salad, add raw veggies and double the beans.

Recipe Ingredients for Spinach Salad with Aduki Beans and Clementine Vinaigrette

6 Medium Clementines
2 tbsp White Wine Vinegar, Organic
2 tsp Classic Dijon Mustard
0.25 tsp Pepper, Black
1 cup chopped Red Onion
15 oz Beans
3 cups Baby Spinach
0.25 cup fresh Parsley

Recipe Directions for Spinach Salad with Aduki Beans and Clementine Vinaigrette

  1. In a large bowl, whisk together 1/4 cup clementine juice (2 clementines), vinegar, mustard and pepper.

  2. Use a paring knife to cut the peel and pith from remaining clementines.

  3. Working over the bowl to catch any additional juices, cut out each segment and add to the vinaigrette.

  4. Add onions, beans, spinach, and parsley to toss well.

  5. Serve immediately.
