Recipe Ingredients for Spinach Roll Ups

10 oz Frozen Spinach
4 pc Lasagna Noodles
0.25 cup, chopped Onions
1 clove Garlic
3 tsp Italian Seasoning
2 cup Soup, Chicken Broth
0.5 cup (not packed) Cottage Cheese, Lowfat, 1% Milkfat
1 tbsp Parmesan, Grated Cheese
6 oz Tomato Paste

Recipe Directions for Spinach Roll Ups

  1. Cook 4 lasagna noodles according to directions.

  2. Simmer 1/4 cup chopped onion and chopped large clove garlic in 1/4 cup water and 1 Tbsp oil. When water has cooked away saute onions and garlic a bit.

  3. Add 6 oz tomato paste, 1 Tbsp Italian seasoning, and 2 cups chicken broth to onions and garlic. Simmer until slightly thickened.

  4. In a bowl, mix 10 oz frozen spinach (thawed and with water pressed out), 1/2 cup cottage cheese, and 1 Tbsp parmesan.

  5. Spread generous 1/3 cup spinach mixture along length of each lasagna noodle, roll up, and place in 8x8 casserole dish sprayed with PAM or similar. Do not let rolls touch.

  6. Cover rolls with tomato sauce.

  7. Bake at 400F for about 25 minutes.
