Mushrooms stuffed with risotto and spinach.

Recipe Ingredients for Spinach & Risotto Stuffed Mushrooms

8 large Mushrooms
1 cup Garlic Primavera
1 cup Spinach

Recipe Directions for Spinach & Risotto Stuffed Mushrooms

  1. Prepare Garlic Primavera risotto according to package directions and bring to a boil.

  2. Chop 1c fresh spinach.

  3. Remove stems from whole mushrooms and hollow out the caps. Save the excess. Set caps aside.

  4. Dice mushroom stems and pieces left over from the previous step.

  5. Add spinach and diced mushrooms to pan when risotto boils.

  6. Finish cooking risotto according to package directions.

  7. Scoop cooked risotto mixture with a spoon and fill caps, placing them on a broiler pan.

  8. Broil for 5 minutes to heat mushrooms through, or longer for a softer texture.
