Recipe Ingredients for Spinach Ricotta Stuffed Chicken Breasts

4 oz frozen spinach
2 Garlic CLoves
2 tsp Extra Virgin Olive Oil
3 chicken breast
1 can tomato puree
1 cup mozzarella cheese
8 ounce ricotta cheese

Recipe Directions for Spinach Ricotta Stuffed Chicken Breasts

  1. Saute garlic in 2 tsp. extra virgin olive oil

  2. Add Spinach and cook on medium 5-10 minutes until moisture starts to leave

  3. Season with Salt and pepper

  4. Add Ricotta cheese an mix

  5. Reduce heat to low as you continue with the recipie

  6. At the thickest part of the Boneless skinless chicken breast cut a center pocket on each, leaving approximately 1 inch on each side

  7. Stuff the pockets with the cheese/spinach mixture and put in a baking pan

  8. At this time you can add the Plain tomato puree...or season it to taste...or substitute with Spaghetti sauce, just watch the sugar if you are on South Beach or other controlled carb diets

  9. Cook for 35 Minutes at 350 degrees

  10. Top with mozzarella and cook until slightly golden, 10-15 minutes

  11. Enjoy!!!
