A traditional Maltese recipe, can also be adapted for cannelloni.

Recipe Ingredients for Spinach and ricotta shells

200 grams Frozen Spinach
300 grams Ricotta, Part Skim Milk Cheese
2 medium Onions
3 Rasher Bacon
1 medium Egg, Whole
1/2 tbsp Parsley
320 grams Conchigliette
2 clove Garlic
6 medium Tomatoes
3 tbsp Parmesan, Grated Cheese
250 g semi skimmed milk

Recipe Directions for Spinach and ricotta shells

  1. Prepare the filling by cooking the bacon and onions in a little water.

  2. Mash ricotta and add it to the onion, bacon, spinach, egg, cheese and parsley.

  3. Fill the shells with the filling and leave them to moisten in the milk.

  4. prepare the sauce by frying the garlic, onion, herbs and then add the tomatoes.

  5. Add the tomato sauce on top of the shells.

  6. Sprinkle some grated cheese on top.

  7. Cook in a pre-heated oven (200C) for around 20 minutes.
