Light Spinach Ricotta Quiche with a goat cheese touch

Recipe Ingredients for Spinach Ricotta Quiche with a Whole Wheat Crust

1 cup all-purpose flour
1 cup whole-wheat flour
2 eggs
1/2 cup water
1/4 cup olive oil
1 pinch salt
1 pinch oregano
4 cups spinach
3 cups Ricotta Cheese
60 g goat cheese
80 ml Half & Half
1 cup walnuts

Recipe Directions for Spinach Ricotta Quiche with a Whole Wheat Crust

  1. Put the flours together with the olive oil and mix with a mixer, slowly add the cold water and 1 egg yolk. Add some salt and oregano.

  2. Mix with your hands and refrigerate for at least 30 minutes

  3. Roll the dough and cover a lightly greased pan. Cover with paper and some beans and bake fo 10 minutes. Then take the paper out and bake for another 10 minutes

  4. Mix the spinach, ricotta cheese, light cream, whole egg and egg white, walnuts, salt and pepper in a bowl.

  5. Pour the mix in the pre-baked crust and add some shredded goat cheese.

  6. Bake for 20-25 minutes at 180c.
