Easy and fast! Use whole-wheat pasta and fat-free ricotta if desired.

Recipe Ingredients for Spinach and Ricotta pasta

8 oz Rotini Pasta
1 cup Spinach
2 serving Minced In Oil Garlic
1 cup Part-Skim Ricotta Cheese
3 serving Parmesan and Romano Medium 100% Grated Cheese
4 slice Classic Sliced Turkey Bacon
12 oz Diced Tomatoes
0.5 cup (8 fl oz) Water

Recipe Directions for Spinach and Ricotta pasta

  1. Cook pasta according to pkg directions. Spray a skillet with non-stick cooking spray. Cook chopped turkey bacon, spinach and garlic in skillet for 5 minutes. Stir in ricotta cheese, 1.5 T Parm cheese, water, and 1 can diced tomatoes, drained. Salt and pepper to taste.

  2. Add cooked pasta to skillet, stir until well blended. Sprinkle with another 1.5 T parm. cheese.
