Ziti macaroni in a rich spinach and mushroom sauce.

Recipe Ingredients for Spinach Ricotta Pasta

16 oz. dry macaroni
15 oz. tomato sauce
1 cup fat free ricotta
8 oz. frozen spinach
5 oz button mushrooms
1/4 cup grated parmesan
1/4 cup olive oil
1/2 tsp nutmeg
1 tbs dry parsley

Recipe Directions for Spinach Ricotta Pasta

  1. Boil water for macaroni.

  2. Heat olive oil in lg saucepan on medium, add chopped onion and mushrooms.

  3. When onions are translucent, and mushrooms are tender, add garlic, cook for 1 minute more. Add tomato sauce and frozen spinach. Heat through, stirring occasionally.

  4. Add macaroni to water. Cook 10 minutes.

  5. Last 5 minutes of macaroni cooking, add grated parmesan and ricotta cheeses to sauce, heat through for 5 minutes.

  6. Drain macaroni, toss with pasta.
