Recipe Ingredients for Spinach and rice

1/3 cup olive oil
2 onions, chopped
2 pounds fresh spinach
8 ounce tomato sauce
2 cups water
1 teaspoon oregano
1 teaspoon dried parsley
1 salt and pepper to taste
2/3 cup brown rice
1 tablespoon feta cheese

Recipe Directions for Spinach and rice

  1. Heat olive oil in a large skillet over medium-high heat. Sauté onions in the oil until soft and translucent.

  2. Add spinach and cook, stirring for a few minutes (spinach will wilt down to almost nothing!).

  3. Add tomato sauce and water and bring to a boil. Then add dill weed, parsley, salt and pepper.

  4. Stir in rice, reduce heat to low and simmer uncovered for 25 minutes or until rice is tender. You may need to add more water if necessary.

  5. Plate and serve with a little lemon juice and crumbled feta!
