Recipe Ingredients for Spinach, Red Onion and Asparagus Cous Cous

10 ounces cous cous
20 ounces chicken stock
1 pound asparagus
1/2 red onion
1/2 pound spinach
1 tsp salt
2 tsp pepper
2 tsp garlic powder
2 tsp onion powder

Recipe Directions for Spinach, Red Onion and Asparagus Cous Cous

  1. Boil 16 ounces of chicken stock, add cous cous, stir and cover, removed from heat for 5-6 minutes. Fluff cous cous when done.

  2. In a wok add sliced/chopped onion and asparagus (cut into small sections on the bias) and enough chicken stock to steam/cook vegetables just to al dente.

  3. Add spinach leaves and wilt, adding small amounts of stock if needed.

  4. Pour cous cous into a large bowl and fluff it again. Stir in vegetables.

  5. Add seasonings and stir in.

  6. Adjust seasonings.
