Recipe Ingredients for Spinach and Quinoa soup

0.5 cup Quinoa
24 fl oz Organic Low Sodium Chicken Broth
2 medium (4-1/8" long) Onions, Spring Or Scallions
85 grams Spinach

Recipe Directions for Spinach and Quinoa soup

  1. Wash 1/2 quinoa and drain.

  2. Cook on high in microwave in 1 cup chicken broth for 9 minutes until most of the broth has been absorbed. Stirring every 3 minutes

  3. Chop 85 g of raw spinach

  4. Move the quinoa to the stove and add 2 more cups of chick broth.

  5. Toss in the chopped spinach, 1/4 tsp Mrs. Dash's original seasoning and crushed red pepper flakes to taste.

  6. Chop 2 green onions and add to soup.

  7. Heat until spinach is tender
