Nice cold as a salad or side dish.

Recipe Ingredients for Spinach and Quinoa

1 cup dry Quinoa
2 clove Garlic
300 grams Frozen Spinach
4 serving Feta low fat - Western family
4 serving Balsamic Vinegar
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.5 oz Oregano
1 tbsp chopped Chives
1 dash Pepper, Black

Recipe Directions for Spinach and Quinoa

  1. Thaw Spinach.

  2. cover and boil Quinoa until tender in 2 Cups of water.

  3. Chop Tomatoes, garlic, chives, Feta and fresh Oregano.

  4. Mis all ingredients in a big bowl.

  5. Yields approx 7 cups.
