Recipe Ingredients for Spinach Quinoa Bake

1 cup Quinoa
20 oz Spinach
1 medium raw Onion Yellow
2 clove Garlic
2 large egg Eggland's Best Egg
0.13 cup Bread Crumbs Italian Style
1 tbsp Olive Oil
8 oz Cottage Cheese, Lowfat, 2% Milkfat
6 slice Cheese
1 tsp Rosemary, Dried
1/2 tbsp, leaves Thyme, Dried
1/4 tsp Pepper, Black

Recipe Directions for Spinach Quinoa Bake

  1. The Quinoa called for in this recipe is the dry amount. To cook, bring the quinoa and 1 1/2 cups water to boil then cover and simmer for 20 minutes. Fluff with fork.

  2. Preheat oven to 350.

  3. Prepare an 8x8 baking dish by spraying it with cooking spray or rubbing a bit of olive oil on it. Add the breadcrumbs and coat the entire bottom and sides.

  4. Blanch Spinach in boiling water for 10 seconds, then cool in ice water until cold. Press out as much water as possible and chop the spinach.

  5. In a separate pan, saute onion, garlic, thyme, and rosemary in the olive oil until onion is translucent, about 8 minutes.

  6. In a large bowl mix together the spinach, egg, cottage cheese, and pepper. Add the onion mix and stir well.

  7. Dump 1/2 the mix into the baking dish and put three slices of the swiss cheese on, then dump the rest in and add the remaining three slices of swiss cheese. Put in the oven and bake for 60 minutes.
