Can be made crustless. I used 1 1/4 cups Egg Beaters instead of the eggs.

Recipe Ingredients for Spinach Quiche

1 1/2 teaspoon olive oil
1 onion, chopped
9 ounce fresh spinach
1 1/4 cups Egg Substitute
1 1/2 cups shredded 2% cheddar cheese
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 Pillsbury pie crust

Recipe Directions for Spinach Quiche

  1. Saute the onion and spinach until tender or wilted.

  2. In a bowl mix the eggs, cheese, salt and pepper. Add in the spinach and onion mixture and stir well.

  3. Place pie crust in 9" pie dish and pour in egg mixture.

  4. Bake at 350 degrees for approximately 30 minutes (might want to check it at 25 for doneness). Allow to sit 10 minutes after baking.
