Recipe Ingredients for Spinach Quiche

1 1/2 cups rice
1 cups cheese
3 eggs
1 cup skim milk
2 cups spinach
1 teaspoon nutmeg

Recipe Directions for Spinach Quiche

  1. Crust: Mix up rice, 1/2 cup cheese and 1 egg. Spray a pie plate with pam; spread the mixture evenly on the bottom of pan. Bake at 350 degrees for 15 minutes or until crust is firm.

  2. Veggie Filling: Wilt fresh spinach in microwave by cooking for 2 minutes on a plate with a little water in the bottom or use unthawed frozen spinach. Place cooled spinach in a colander and press out water. Place this on top of crust in pie pan. Sprinkle with remaining 1/2 cup of cheese and nutmeg.

  3. Egg filling: Beat 2 eggs and 1 cup milk (or water + dry milk) in a bowl. Pour over mixture in pie pan.

  4. Cook at 350 degrees for 45 minutes. When finished cooking, a toothpick poked into the middle of casserole will come out clean.
