Recipe Ingredients for Spinach Quiche

8 oz spinach
4 eggs
1/3 cup cottage cheese
1/4 cup Parmesan cheese
1 pie crust, deep dish
8 oz fat-free evaporated milk
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Spinach Quiche

Preheat oven to 400 degrees F. In a medium bowl, beat the eggs; Mix in the cheeses and salt and pepper. Defrost the spinach and squeeze out any additional water. Place the spinach in the bottom of the defrosted pie crust shell. Add the 8oz of evaporated milk to the egg and cheese mixture, stir well, and pour over the spinach. Bake for 10 minutes, and then reduce heat to 350 degreese F for 25 more minutes until center is set. Use evaporated milk for other use.
