Very tasty and fluffy quiche made with spinach and a tasty selection of cheese. Takes a while to prepare, but is well appreciated by all!

Recipe Ingredients for Spinach Quiche

1 1/2 cups flour
1/4 teaspoon salt
2/3 cup butter, chilled and diced
1 large egg, separated
2 tablespoons water
1 lb baby spinach
5 oz cream cheese
2 eggs
1 egg yolk
1 2/3 cups heavy cream
1 tablespoon parmesan cheese
1 garlic clove, crushed
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup feta cheese, cut into small cubes
10 cherry tomatoes, halved
1 teaspoon sunflower oil

Recipe Directions for Spinach Quiche

  1. Combine the flour and salt in a bowl and cut in the butter with a pastry blender until it resembles fine bread crumbs. Mix in the egg yolk and just enough water to bring the dough together.

  2. Shape into a ball and wrap in plastic wrap. Chill in the refrigerator for 1 hour.

  3. Preheat the oven to 375F.

  4. Oil a 9-inch fluted tart pan with a removable bottom.

  5. Roll out the pastry to 1/4 inch thick. Line the base and sides of the pan. Line the pastry with foil and fill with baking beans.

  6. Bake for 15 minutes. Remove the foil and beans and brush with the egg white. This will act as a seal and prevent leaks.

  7. Bake for 8-10 more minutes, until lightly golden.

  8. Decrease the oven temperature to 350F.

  9. Place the spinach in a large saucepan with a pinch of salt and 1 tablespoon water, cover, and cook for 4 minutes, or until the spinach has wilted.

  10. Drain, and when cool enough to handle, squeeze out excess water with your hands. Chop coarsely with a sharp knife.

  11. Whisk the cream cheese with the eggs and egg yolk in a large bowl. Whisk in the cream, Parmesan, and garlic. Season with salt, pepper, and nutmeg.

  12. Stir in the spinach.

  13. Pour the filling over the pastry base.

  14. Put the feta and tomatoes in a small bowl and coat with oil. Sprinkle over the quiche. Bake for 35-40 minutes, until just golden, and lightly puffed. Serve hot.
