Recipe Ingredients for Spinach Quiche

6 eggs, scrambled
10 ounces spinach, washed
6 tablespoons cream
2 tablespoons olive oil
3/4 cup Parmesan cheese
1 1/2 tablespoons lemon juice
1/2 teaspoon garlic, minced
1/4 cup onion, diced
1/2 cup nutmeg

Recipe Directions for Spinach Quiche

  1. Mix all ingredients except onion in large bowl.

  2. In large skillet, saute onion in olive oil until soft.

  3. Pour mixed ingredients into pan, reduce heat to low and cover. Cook until eggs have set.

  4. Gently lift cooked edges with spatula, remove pan from heat, and let sit, covered, for five minutes before slicing into thirds and serving.
