A recipe from Pillsbury that I changed to make lower fat.

Recipe Ingredients for Spinach Quiche Cups

16 crescent rolls - reduced fat
8 oz spinach
8 oz light cream cheese
1 small onion
1 cup mozzarella cheese shredded
2 eggs
1/4 cup egg substitute
1/4 t salt
1/8 t pepper

Recipe Directions for Spinach Quiche Cups

  1. Heat oven to 350 deg. Spay 16 muffin cups.

  2. Press each crescent roll triangle into each muffin cup.

  3. In a large bowl, beat cream cheese with mixer until smooth.

  4. Add eggs one at a tie beating well after each addition.

  5. Stir in onion, spinach, salt and pepper.

  6. Fold in cheese

  7. Fill each cup with egg mixture.

  8. Bake 15-20 minutes.
