Chicken & fresh veggies stir fry with brown rice on a bed of spinach

Recipe Ingredients for Spinach protein salad

1 pound ground chicken
1 zucchini (fresh, chopped into small squares)
1 yellow squash (fresh, chopped into small squares)
1/4 cup carrot (shredded, fresh)
1/2 cup mushrooms (fresh, chopped)
1/2 cup cauliflower (fresh, finely chopped)
1 tbsp soy sauce
1 tbsp ketchup
1 tbsp olive oil
4 cups fresh spinach

Recipe Directions for Spinach protein salad

Cook ground chicken in olive oil, add in carrots & cauliflower and stir-fry a few minutes. Add all ingredients, except rice, and stir fry a few more minutes. Lay a bed of spinach sprinkle brown rice and chicken w/veggies on top.
