0.33 cup Whole Milk
2 serving Extra Virgin Olive Oil
2 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Russet, Flesh And Skin, Baked
1 cup Spinach

Recipe Directions for spinach and potatoe frittata

  1. slice potatoes

  2. season to taste

  3. saute in oil

  4. add spinach when tender

  5. wilt spinach

  6. add beaten milk and eggs

  7. sprinkle cheddar cheese on top

  8. cover and cook on low until set
