I had some fresh spinach that was starting to wilt and wanted a healthy way to use it. I found a recipe online and "tweaked it" to make it healthier. It was hearty and tasty and one I will make again. Would go great with a bisquit or as a starter to a meal. Double the serving and have a great hearty lunch!

Recipe Ingredients for Spinach Potato Soup

1 onion, chopped
2 stalks celery, chopped
3 garlic cloves, chopped
2 tablespoons extra virgin olive oil
1 cup fresh mushrooms, sliced
4 cup fat free chicken broth
3 tablespoon cornstarch
2 cup potatoes, chopped
1 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon dill weed
2 cup spinach, chopped
1/4 c skim milk

Recipe Directions for Spinach Potato Soup

  1. In a deep pot, add olive oil, onions, celery, garlic and mushrooms, cooking on low heat until tender. Add chicken broth, corn starch (I whisked the corn starch in some of the broth so it was not lumpy and easier to combine) , potatoes and spices, stirring well and bring to a boil on med heat. Simmer for about 30 minutes or until potatoes tender. Stir in spinach and skim milk, stir in well and cook for another 5 ? 10 minutes.

  2. Makes approx 6, 1 cup servings
