Recipe Ingredients for Spinach Potato Leek Soup

2 T olive oil
1 large leek, quartered and sliced
5 cloves garlic, sliced
1 c celery, diced
6 large mushrooms, sliced
2 large russet potatoes, diced
1 1/2 t oregano, dried
1 t kelp
1/2 t black pepper
1 t kosher salt
1 quart low sodium chicken stock (or veggie stock)
2 c spinach, chopped

Recipe Directions for Spinach Potato Leek Soup

Heat olive oil in a medium stock pot on medium heat. Saute the leek, celery and garlic until fragrant and soft. Add the mushrooms, oregano, kelp (or dulse), black pepper and salt and cook until the mushrooms have a bit of color. Add the potatoes and stock. Cover and bring to a simmer. Lower heat and gently simmer until the potatoes are cooked. When done add the chopped spinach and turn off the heat. The spinach will wilt in the heat of the soup. Taste and adjust seasoning as necessary.
