Simple & elegant one-dish breakfast

Recipe Ingredients for Spinach & Potato Frittata

1 cooking spray
5 small red potatos, sliced thin
2 c baby spinach
2 tbs scallions, sliced
1 tsp garlic, crushed
1/2 tsp sea salt
1 pepper to taste
6 eggs
1/3 c 1% milk
1/2 c Cheddar cheese, shredded

Recipe Directions for Spinach & Potato Frittata

  1. Spray skillet, place over medium heat. Arrange potatoes evenly on bottom of skillet, cover and cook 10-12 minutes until potatoes are tender but firm. Mix in spinach, scallions, and garlic, season with salt and pepper. Continue cooking 2 minutes until spinach is wilted.

  2. Mix together eggs and milk. Pour into skillet over vegetables; sprinkle with cheese. Cover and cook 7-9 minutes or until eggs are firm. (Tip: near the end of cooking, lift edges and tilt pan so that any uncooked egg mixture runs underneath.)
