High protein-low cal breakfast or dinner.

Recipe Ingredients for Spinach & Potato Frittata--Cooking Light (modified)

1 1/2 yukon gold potatoes, chopped
4 eggs
2 egg whites
10 ounces spinach
1 ounce bacon
1/2 cup chopped onion
5 ounces canadian bacon
1 tbsp canola oil

Recipe Directions for Spinach & Potato Frittata--Cooking Light (modified)

  1. Chop potato and boil for 5 minutes.

  2. Combine egg whites, eggs, potato, canadian bacon (chopped), salt and pepper.

  3. Fry one slice of bacon.

  4. Wilt spinach in bacon grease.

  5. Add spinach and bacon to egg mixture.

  6. Saute 1/2 cup onion in canola oil until soft.

  7. Add egg mixture to pan. Cook until almost set--about 5 minutes.

  8. Top with 2% cheddar cheese (optional) and bake at 400 degrees for six minutes.

  9. Let set for three minutes.

  10. Serve with Tobasco!
