Also called Aloo palak, is a simple recipe seasoned with spices that adds a slight tangy flavor. Can be easily modified to suit your taste. Serve with Naan, chapati or tortilla, Rice. Makes an excellent side dish. Can be used as a spread on a toast. I eat it like a soup ! Pros: High in fibre, Iron, Protein and Vitamin A, C. Low carbs.

Recipe Ingredients for Spinach Potato curry

2 cups spinach, chopped
1 cup potato, diced
1/2 tsp Coriander powder
1/4 tsp cumin powder
1 green pepper, chopped
1/2 tsp tamarind paste
1 tsp canola oil
1/2 tsp cumin seeds
1 pinch asafoetida or Hing
1/4 tsp salt

Recipe Directions for Spinach Potato curry

  1. Microwave potatoes sprinkled with little salt and water.

  2. Microwave spinach for 5 mins sprinkled with water. Can be made into course paste (optional).

  3. Heat oil in a pan, add cumin seeds.

  4. Once cumin seeds splutter, add the asafoetida.

  5. Add green pepper mix and add the potatoes.

  6. Cook for a couple of minutes and add spinach. Cover and cook for 6 mins mixing every couple of mins.

  7. Add tamarind paste, other spices, salt and cook for another couple of mins.

  8. Uncover and cook till excess water evaporates... Done !
