This savory meal is proof that not all omelettes need cheese in order to be delicious.

Recipe Ingredients for Spinach and Potato Baked Omelette

1 c potato, sliced thinly
8 eggs, beaten
1 tbsp all-purpose flour
1 tsp baking powder
1/2 tsp salt
2 tbsp olive oil
1 tbsp garlic, minced
4 c spinach
1/2 c onion, thinly sliced
1/4 tsp paprika

Recipe Directions for Spinach and Potato Baked Omelette

  1. In saucepan of boiling water, cook potato until tender - 7-10 minutes. Drain & let cool.

  2. Meanwhile in sm bowl, whisk together eggs, flour, baking powder, and half the salt.

  3. In 9-in nonstick, ovenproof skillet, heat half the oil * saute garlic 1 min.

  4. Add spinach and cook, stirring until wilted and no liquid remains. Transfer to separate bowl.

  5. Add remaining oil to skillet, cook onion stirring occasionally until softened about 6 min.

  6. Add potato, cook stirring until starting to brown. Stir in paprika and remaining salt. STir in spinach. Stir in egg mixture.

  7. Transfer skillet to 350 degree oven, bake until firm (about 20 min)
