Spinach with Pine Nuts & Raisins

Recipe Ingredients for Spinach with Pine Nuts & Raisins

2 tbsp raisins
1 tbsp hot water
1 tsp olive oil
1/2 g cooking spray
1 garlic clove, minced
9 oz spinach
2 tbsp pine nuts, toasted
1/4 tsp table salt
1/4 tsp cayenne pepper

Recipe Directions for Spinach with Pine Nuts & Raisins

  1. In a small microwavable bowl, plump raisins with hot water on high heat for 30 seconds.

  2. In a large nonstick skillet over medium-high heat, warm oil; add garlic. Cook until fragrant, about 1 minute. Add spinach and stir occasionally until wilted, about 2 to 3 minutes.

  3. Toss with raisins, nuts, salt and pepper. Serve immediately.
