Recipe Ingredients for Spinach, Pine nut and Feta Salad

150 g raw spinach
200 g semi dried tomatoes, drained
200 g artichoke hearts
85 g olives
2 tbsp lemon juice
2 tbsp olive oil
1 garlic clove
2 tbsp pine nuts
40 g feta

Recipe Directions for Spinach, Pine nut and Feta Salad

  1. Place spinach leaves in bowl with semi dried tomatoes, artichoke hearts, black olives.

  2. Place lemon juice, olive oil and garlic in a bowl, season and mix well.

  3. Toast the pine nuts in a dry pan for a few minutes until browned.

  4. Combine dressing with spinach mixture.

  5. Divide leaves onto 4 plates and sprinkle evenly with pine nuts and crumbled feta.
