Spinach Pie Stuffed Mushrooms Recipe

Spanakopita filling stuffed in Baby Portabella mushrooms. Great hors d'oeuvres for a holiday dinner or cocktail party. Make a day in advance to be either baked or microwaved just before serving.

Recipe Ingredients for Spinach Pie Stuffed Mushrooms

2 lbs. Cremini mushrooms, stems removed (about 24 caps)
2 tablespoons Olive Oil
1/2 cup green onion, chopped fine
1 teaspoon dried dill
1 lb. frozen chopped spinach, thawed
1/4 teaspoon pepper
2 ounces Philadelphia Neufchatel Cream Cheese, 1/3 less fat
4 ounces feta cheese
2 ounces Parmesan cheese, finely grated

Recipe Directions for Spinach Pie Stuffed Mushrooms

  1. Clean mushrooms with soft brush and damp flour sack tea towel as needed.

  2. Gently remove mushrooms stems and place mushroom caps in glass pie plates or glass baking dish cavity side up. Reserve stems for your morning omlet or dinner salad.

  3. Microwave Spinach in covered glass dish (pyrex or corningware type thing, no plastic wrap please) with 2 Tablespoons water for 8 minutes. Remove lid when done and let out steam ... most of the water will evaporate.

  4. In mixing bowl grate parmesan cheese, crumble in Feta cheese and add Neufchatel Cream Cheese, blend together.

  5. Heat olive oil in large saute pan on medium.

  6. Add green onion to pan and saute until softened.

  7. Add dill and pepper, stir to combine.

  8. Add Spinach and continue to cook just to remove any remaining moisture. When done turn off and let cool slightly.

  9. Add Spinach saute mix to cheese mixture and combine.

  10. Fill mushroom caps with Spinach & Cheese mixture. Cover and refridgerate until you are ready to bake or microwave.

  11. Just before serving: Remove mushrooms from fridge, uncover, and EITHER >>> Pre-heat oven to 350 degrees Fahrenheit (176 degrees Celsius) and bake 15 to 20 minutes >>> OR <<< Microwave a full glass pie plate or square glass dish until hot (about 2 to 3 minutes - more or less as needed) ***WARNING: DO NOT ATTEMPT TO MICROWAVE INDIVIDUAL MUSHROOMS - THEY CAN IGNITE AND FLAME QUICKLY =:-0 (been there, done that.)***
