A crustless quiche type spinach pie. Delicious and satisfying!

Recipe Ingredients for Spinach Pie Parm

6 T. Parmesan cheese
10 oz. frozen spinach, drained
1 c. small curd cottage cheese
1 c. Monterey Jack cheese
3 eggs
2 T. sour cream
1/2 t. dried minced onion
1/2 t. garlic salt
2 medium tomatoes

Recipe Directions for Spinach Pie Parm

Mix everything except 2 T. of the Parmesan and the tomatoes. Pour into a greased pie plate. Bake at 350 degrees for 30 to 35 min. Top with thin slices of the tomatoes and the remaining 2T. Parmesan cheese. Bake an additional 5 min. Let stand 5 min. before cutting.
