Recipe Ingredients for Spinach and peppers

1 tablespoon extra virgin olive oil
1 large onion
1 bell pepper
4 cups spinach

Recipe Directions for Spinach and peppers

Heat oil in large skillet over medium heat. Add onion, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook stirring occassionally until onion begins to soften (5-6 min). Add bell pepper and cook, stirring occassionally, until softeneed (about 5-6 min). Add the spinach and cook until its wilted (approx. 2 minutes).
