Spicy fahita filling with spinach, multi-colored peppers, and white beans.

Recipe Ingredients for Spinach/pepper/white bean fahitas

6 oz. cooked chicken
1/2 bell pepper, yellow
2 red sweet pepper
1/2 bell pepper, green
1/2 large onion
2 cloves garlic
1 jalapeno pepper
1/2 cup white beans (cannellini)
1/4 cup salsa
1 cup chopped spinach (fresh)
1 Roma tomato, chopped
1 tbsp olive oil

Recipe Directions for Spinach/pepper/white bean fahitas

  1. Chop all vegetables Using pam spray and olive oil saute onions and peppers and garlic. Add cooked chicken cubes, spinach, and beans with salsa and enough water to make the sauce . Stir all of it together.

  2. Serve in low-fat flour tortillas. Garnish with sour cream and use additional taco sauce if desired. (tortillas and garnish not included in the analysis.)
