Good base recipe that can be altered in many ways. I bake it in muffin tins and heat one serving for 30 sec in the microwave each morning.

Recipe Ingredients for spinach & pepper frittata

1 tsp olive oil
2 eggs
4 egg whites
1/2 cup bell pepper, diced
1 cup fresh spinach, sliced into strips
2 tbsp parmesan
3 tbsp plain nonfat yogurt
1/4 tsp salt
1/4 tsp pepper
1 tsp red pepper flakes
2 cloves garlic

Recipe Directions for spinach & pepper frittata

  1. Over medium high heat, saute bell pepper, garlic and red pepper flakes until pepper softens.

  2. Add spinach and saute for 3-4 minutes.

  3. Remove from heat. While peppers are cooking, whisk together eggs, egg whites, yogurt, parmesan, salt and pepper.

  4. Portion pepper mix into each of 6 muffin tins, then pour egg mix into the tin.

  5. Bake at 325 for 18-20 min. Let eggs set up for 5 minutes before eating.
