I took a baked pasta recipe and modified it to add healthier versions of the main ingredients, then switched from meat to spinach to up the nutrition.

Recipe Ingredients for Spinach pasta bake

8 oz Ronzoni Smart pasta
4 oz chopped onion
4 oz chopped green bell pepper
4 oz chopped yellow bell pepper
4 oz chopped red bell pepper
14 1/2 oz canned diced tomatoes, no salt added
6 oz tomato paste
1/3 c water
1 t oregano
1/2 t ground black pepper
16 oz fat-free cottage cheese
1 t marjoram
6 oz fat free mozzarella cheese
1/4 c shredded parmesan cheese
12 oz chopped spinach
1/2 c egg substitute

Recipe Directions for Spinach pasta bake

  1. Cook pasta according to package directions. Check frequently, drain it at al dente or even a little less, since it will absorb more liquid while baking.

  2. Meanwhile, spritz a medium saucepan lightly with olive oil spray. Cook onion & bell peppers over medium heat. Stir in tomatoes (don't drain), tomato paste, water, oregano, and pepper. Bring to a boil. Cover, reduce heat and simmer 15 minutes or until pasta is done.

  3. In a bowl, combine cottage cheese, spinach, marjoram and egg substitute. Stir half this mixture into the sauce.

  4. Preheat oven to 350 F.

  5. Coat a rectangular baking dish with olive oil spray. Spread 1/2 C sauce into the bottom. Layer 1/2 the pasta, 1/2 the remaining sauce, and 1/2 the mozzarella cheese. Add the remaining cottage cheese & spinach mixture. Then layer in the remaining pasta, sauce, and mozzarella. Sprinkle the parmesan across the top.

  6. Bake uncovered for 30-40 minutes until bubbly and heated through.
