Recipe Ingredients for Spinach Parmesan Quinoa

1 cup quinoa
2 cups water
1 tbsp butter
1 pinch salt
10 oz frozen spinach
4 oz parmesan, shredded

Recipe Directions for Spinach Parmesan Quinoa

  1. cook quinoa in water with butter and salt (or use chicken broth)

  2. thaw spinach

  3. stir quinoa, spinach and most of the parmesan together in a baking dish

  4. sprinkle with remaining parmesan

  5. bake at 350 for 20 minutes or until hot through
